Winemaking Approach: At Brick & Mortar, we emphasize minimal intervention and highlight texture, freshness, and balance in our wines. Our sparkling wines undergo extended lees aging, typically up to 48 months, to add complexity and depth. Moreover, our limited-production, single-vineyard wines are released three times yearly, with the first offering to our wine club, and the second to our mailing list.
