At Brick & Mortar Wines, we emphasize a style deeply rooted in traditional French winemaking techniques, especially in our sparkling wine production as well as our single-vineyard Chardonnay and Pinot Noir. We prioritize early picking to preserve the fruit’s integrity, extended lees aging, often up to 48 months, to add complexity and roundness, and using very specific oak to balance acidity and add weight. 

These practices allow us to express the unique terroir of our high-elevation vineyards in Napa, Sonoma, and Mendocino, resulting in wines that showcase freshness, depth, purity, and power in perfect harmony. Our approach is shaped by years of experience and close relationships with select coastal vineyards above the fog line, where the challenging climate helps our fruit ripen fully while keeping sugars naturally low.

This one’s got structure, minerality, and charm.
